What Does Specialty Grade Coffee Actually Mean?
"Specialty grade" is printed on a great deal of coffee. Unlike most marketing language, it started out meaning something specific and measurable — a cupping score, a defect count, a sample weight. What almost nobody mentions is that the standard behind it was formally retired in 2025, and the industry is still catching up.
Short answer: Specialty grade traditionally means a coffee scoring 80 or above on the SCA's 100-point scale, with zero primary defects and no more than five secondary defects in a 350 g green sample.1 In October 2025 the SCA adopted the Coffee Value Assessment as its official cupping standard, superseding the 2004 protocol that produced the 80-point rule.2 Most of the industry, including our own cupping, still uses the legacy scale during the transition.

01 / The ThresholdWhat 80 points actually measures
The number comes from a cupping form. Trained evaluators taste a prepared sample and score it across attributes — fragrance and aroma, flavor, aftertaste, acidity, body, balance, uniformity, clean cup, sweetness, and overall impression — then subtract for defects. Add it up and you get a figure out of 100. Eighty is the line.
Two things about that line are worth understanding. First, it isn't arbitrary; it represents a coffee free of faults and taints, with at least one distinctive attribute in body, flavor, aroma, or acidity.3 Second, and less commonly known: the scale doesn't meaningfully extend below 80. Coffees under the threshold aren't ranked with precision — the system was built to differentiate quality above the line, not to sort what falls beneath it.4
Grading also has a physical half that gets far less attention than the cup score, and it's arguably stricter.

The narrowness at the top is the honest headline here. Specialty grade is a small fraction of global production, and the tier immediately below it — Exchange Grade — is where most supermarket coffee lives. That isn't a moral judgment; commodity coffee feeds an enormous amount of the world and does its job. But it's a different product category than what a cupping score above 80 describes.
How small a fraction, exactly?
Less settled than you'd expect. The figure repeated most often across the industry is that roughly 5–10% of the world's annual coffee harvest qualifies as specialty grade.18,19 Other roasters publish considerably lower numbers — under 3% is not uncommon20 — and various sources cite figures anywhere between those poles.
Here's the part worth knowing: there does not appear to be an authoritative published figure. The SCA's own research pages cover consumption demographics rather than production share, and grading happens lot by lot at origin and on arrival — it isn't centrally tallied into a global total. Nobody is counting every specialty lot produced worldwide, which means the widely cited percentages are estimates rather than measurements.
So the accurate statement is a range with a caveat attached: specialty grade is commonly estimated at somewhere between 3% and 10% of global production, and the true figure isn't precisely known. That's less satisfying than a clean number, and it's the honest version. Any brand quoting a specific percentage as fact — including a flattering one — is quoting an estimate.
03 / DefectsWhy one bean can disqualify an entire lot
Green grading is a physical inspection, done by hand. A 350 g sample is spread on a matte black surface under full-spectrum lighting and sorted bean by bean against the SCA's defect handbook.5 Defects fall into two categories by severity.
Primary (Category 1)
Severe. A single one disqualifies a lot from specialty.

The counting is weighted, which is where it gets genuinely rigorous. One full black bean — a category 1 defect — is equivalent to three partial black beans, a category 2 defect. A grader must count five broken, chipped, or cut beans before those register as a single full category 2 defect.1

Severity is inversely proportional to count: the worse the defect, the fewer beans it takes.1
So the practical bar is severe: a single full black bean or full sour bean in a 350 g sample disqualifies the lot, regardless of how well it cups.6 A coffee can taste excellent and still fail on physical inspection alone.
Quakers are a separate problem entirely — underdeveloped beans that look normal when green and only reveal themselves after roasting, staying pale while everything around them darkens. They taste papery and peanutty. Specialty grade permits zero quakers in a 100 g roasted sample; Premium allows three; Exchange allows five.3

Every number in the grading system is a proxy for a chemical reality. The thresholds look arbitrary until you know what's happening inside the bean — at which point they stop looking arbitrary at all.
Why a single defective bean matters
Primary defects aren't cosmetic damage; they're the visible signature of chemical processes that already happened. Full black beans and full sour beans generally result from over-fermentation — microbial activity that continued past the intended point during processing, producing acetic and propionic acid and a range of off-compounds. Those compounds are extractable. They dissolve into the brew alongside everything else, which is why one contaminated bean can carry through into a cup while five broken beans, which are structurally damaged but chemically sound, do not.
That distinction is the entire logic of the primary/secondary split. A partial black bean is counted at one-third the weight of a full black bean, and five broken or chipped beans are required before they register as a single full secondary defect,1 because the grading system is tracking contamination risk rather than appearance.
Why quakers stay pale
Quakers are underdeveloped beans, typically from cherries picked before full maturity, and their problem is a deficit in precursors. Normal roasting relies on the Maillard reaction — a cascade between reducing sugars and free amino acids that produces the brown color, the roasted aroma, and a large share of coffee's flavor compounds. A bean that never accumulated sufficient sugars during maturation has less to react with, so it browns poorly and stays visibly light while the rest of the batch darkens.
The resulting papery, peanutty flavor isn't a roast defect. It's the taste of a bean that couldn't complete the reactions roasting depends on — which is why quakers are invisible in green form and only reveal themselves after the roast, and why they're counted in a 100 g roasted sample rather than a green one.
This is also why the specialty threshold permits zero quakers while Premium allows three and Exchange allows five.3 A quaker doesn't taint neighboring beans the way a sour bean's compounds can — it simply contributes nothing. The tolerance scales with how much flavor dilution each grade accepts.
Water activity: the number that predicts everything else
Grading also measures water, and the industry shifted from moisture content to water activity for a reason worth understanding. Moisture content is the total water in a bean, bound and free together. Water activity (aw) measures only the free water — quantified as the ratio of its vapor pressure to that of pure water — which is the fraction actually available to drive microbial growth and chemical reactions.12
The consequence: two coffees can share identical moisture content and behave completely differently in storage, depending on how tightly that water is bound within the bean's cellular matrix.13 A lot testing at an acceptable 11% moisture can still be unstable if its water activity is elevated from poor post-harvest drying or reabsorption during storage.13
The water activity scale

The flavor consequences are measurable well before anything spoils. As free water increases, linoleic acid oxidizes into trans-2-nonenal — the compound behind cardboard, woody, and stale notes.16 One documented storage comparison found coffee held at 0.50 aw retained 92% of its original volatile compound concentration after six months, while the same coffee at 0.65 aw retained only 71%.15

There's a floor as well as a ceiling. Below roughly 0.45 aw, beans become excessively dry and brittle — grinding performance suffers, aged flavors appear, and cupping scores fall.17 The practical target sits in a narrow band, commonly cited around 0.50 to 0.60, where microbial risk is negligible and the bean retains enough internal moisture to roast well.12,17
Water activity is why mold and mycotoxin risk in coffee is fundamentally a storage and handling question rather than something inherent to the crop. Ochratoxin A development requires free water that properly dried, properly stored green coffee simply doesn't have — FDA guidance on mycotoxin prevention identifies green coffee stored below 0.60 aw as having negligible risk even after extended storage.15 The specification isn't a warning label. It's the control.
Where mold fits in the grading system
This is worth stating directly, because mycotoxins in coffee attract a lot of alarmed marketing and very little explanation of how the grading system already addresses them.
Fungus damage is classified as a primary defect. Primary defects are not tolerated in specialty grade at any quantity — a single one in the 350 g sample ends specialty eligibility regardless of how the coffee cups.1,3 Mold-affected beans and specialty grade are, by the structure of the standard, mutually exclusive categories. The screening happens at green grading, before a roaster ever takes delivery.
Layer the water activity specification on top of that and you have two independent controls operating at different stages: physical inspection catches visible fungus damage in the sample, and maintaining aw below 0.60 removes the free water that Ochratoxin A development requires in the first place.15 Neither is a test performed after the fact. Both are conditions the coffee has to meet to be classified specialty at all.

An honest caveat, since precision matters more than reassurance: grading inspects a 350 g sample, not every bean in a container. No sampling protocol constitutes a guarantee about a full lot. What the standard provides is a structural screen applied consistently at multiple stages — which is a meaningfully different thing from a claim that contamination is impossible, and a more defensible one.
It's also worth keeping the scale of the concern accurate. Mycotoxins are ubiquitous across the food supply and regulated accordingly in grains, spices, dried fruit, and nuts; coffee is neither uniquely affected nor exempt. The relevant question isn't whether risk exists in the abstract, but whether the sourcing standard is structured to control it — which, for specialty grade, it is.
05 / The Q-GraderWho is qualified to assign a score
A cupping score is only as trustworthy as the person producing it, which is why the certification exists. Q-graders are trained and tested to evaluate coffee against a standardized sensory protocol — assessing not just the cup, but defect count, moisture content, size, and density.7
The exam is notoriously demanding, running multiple days across roughly twenty separate tests: sensory acuity, olfactory identification, triangulation, organic acid recognition, green and roasted grading, and repeated calibrated cupping. Certification requires passing essentially all of it, and it expires — recalibration is required to stay licensed.
The Q certificate has changed hands. In April 2025, the Coffee Quality Institute sold the licensing rights for administering it to the SCA4 — consolidating grading credentials under the same body that publishes the cupping standards.

Cupping is performed in-house by our own licensed Q-graders using the legacy 2004 SCA protocol, which remains the working standard across most of the industry during the CVA transition. These are not third-party verified scores.
Worth being precise about where those numbers come from, because it happens in two separate steps. Green coffee arrives from origin already carrying a grade designation — our Peruvian lots ship in jute marked G1, meaning the exporter classified them Grade 1 under the physical grading described in section 03. That marking travels with the coffee; it isn't something we assign.
The cupping score is separate and comes later. Once a lot reaches us, our own licensed Q-graders cup it and assign a number. The bag tells us the lot passed physical inspection at origin. The cupping tells us how it actually performs in the cup, evaluated by someone accountable to us rather than to the seller. Neither step substitutes for the other, and a lot can carry a G1 marking and still cup lower than we want — which is when a backup cooperative within the same region gets used instead.
Worth stating plainly: every origin above clears 80, but they don't all sit in the same place above it. Peru at 92+ and the Central/South America blend at 81–84 are both specialty grade, and they are not the same coffee. Publishing the spread rather than a single "specialty grade" claim across the whole lineup is the point — you can see exactly what you're buying. 07 / What's ChangingThe standard behind "80+" was retired in 2025
This is the part most coffee content hasn't caught up with. In October 2025, following a preliminary release in June, the SCA adopted three Coffee Value Assessment components as its official cupping standards: SCA-102 Sample Preparation and Cupping Mechanics, SCA-103 Descriptive Assessment, and SCA-104 Affective Assessment — superseding the 2004 Cupping Protocol and Form.2
The reasoning was that a single number flattens too much. The SCA describes the change as a shift away from the limitations of one cupping score toward a data-rich, multidimensional picture of a coffee.2 The project ran roughly four years and drew on feedback from an early adopter program of 800+ businesses.8

The separation of descriptive from affective is the substantive change. Under the old form, "this coffee is intensely floral" and "I find that desirable" collapsed into one number. The CVA records them independently — intensity on its own scale, preference on another.9 A coffee can now be documented as high-intensity in an attribute without that being scored as good or bad.
Here's the wrinkle almost nobody mentions: the green grading rules in section 03 aren't currently published SCA standards either. SCA-110, covering green coffee grading, specifications, and test methods, is still listed among standards in development.10 The 0-primary, ≤5-secondary, 350 g rule is inherited from the 2004 SCAA system and remains industry custom — widely used, consistently reported, but not a currently published rule.
None of this means "specialty grade" is meaningless. It means the phrase currently describes a well-established convention in the middle of being formally replaced. Anyone telling you otherwise — in either direction — is oversimplifying.
08 / The LimitsWhat a grade does not guarantee
Grading happens to green coffee. Every number on this page — cupping score, defect count, moisture content — describes an unroasted bean sitting in a warehouse. That's a meaningful measurement, and it is not the same thing as what ends up in your cup.

An 88-point lot roasted badly, sealed in a paper bag, and sitting on a shelf for eight months is not an 88-point cup. Oxygen, light, moisture, and time degrade coffee regardless of what it scored at origin — and pre-ground coffee loses volatile aromatics dramatically faster than whole bean, because grinding multiplies the surface area exposed to air.
09 / After the GradeWhat has to happen next
Which is why grade is a starting point in our process rather than a finish line. Three things follow it.
Roast level. We roast medium to medium-dark — far enough to develop the bean fully, not so far that origin character is replaced by generic roast flavor. A 92-point Peruvian roasted to French is no longer recognizably Peruvian, which defeats the reason for sourcing it. Packaging and freshness. Nitrogen flushing, high oxygen-barrier film, and a one-way degassing valve exist to protect the thing the grade measured. Our full GENFRESH™ process covers the eight steps between roasting and your door.
Whole bean only. Grinding accelerates staling substantially, and no amount of grading protects against it. Selling whole bean is the only way to hand you the coffee in the condition it was graded in.

Water activity (aw)
A measure of the free, unbound water in a bean, expressed as the ratio of its vapor pressure to that of pure water. Unlike moisture content, it predicts microbial growth and chemical degradation because only free water drives those reactions.
Maillard reaction
The reaction between reducing sugars and free amino acids during roasting that produces browning, roasted aroma, and much of coffee's flavor. Underdeveloped beans lack sufficient precursors to complete it.
Trans-2-nonenal
A compound formed as linoleic acid oxidizes, responsible for cardboard, woody, and stale notes in degraded coffee.
Ochratoxin A (OTA)
A mycotoxin produced by certain molds under sufficient moisture conditions. Its development in green coffee requires free water that properly dried, properly stored beans do not have.
Coffee Value Assessment (CVA)
The SCA's cupping standard adopted in October 2025, replacing the 2004 protocol. Comprises four assessments: sample preparation, descriptive, affective, and extrinsic.
Exchange grade
Grade 3 coffee, permitting 9 to 23 full defects in a 350 g sample. Commodity-market coffee, typical of grocery shelves.
