The whole cherry is dried intact — fruit, mucilage, and all — on raised beds for several weeks. Partial fruit removal — the skin is removed but some or all of the mucilage is left on the bean during drying. The level of origin detail a brand provides is a direct proxy for the depth of their sourcing relationships. Brands working directly with farmers know this information and are proud to share it. Brands buying through commodity brokers often cannot.
A roast date tells you when the coffee was processed. A Best By date tells you whether it is still at its peak — which is the question that actually matters. If a listing shows a roast date, check whether it is within 2–14 days of purchase for standard packaging, or whether the brand uses nitrogen flushing and oxygen-barrier technology that extends genuine freshness beyond that window. No date at all is a serious red flag regardless of how the listing is written.
"Smooth and bold" tells you nothing. "Dark chocolate, dried cherry, cedar finish — developed through medium-dark roasting of washed-process Ugandan Arabica at 1,800m" tells you almost everything you need to know about what to expect in the cup. Specific tasting notes indicate that a trained cupper has evaluated the coffee and documented what they found. Generic descriptors indicate either a lack of quality control or a marketing team writing copy without cupping input.
